Mexican Baked Rice

A make ahead rice casserole that has tons of flavor. A perfect side dish for any meal!

1 cup basmati rice
2 cups water
1 tablespoon lime juice
1/2 teaspoon paprika
1 teaspoon salt
1 tablespoon butter

1/2 cup sour cream
1 cup Tex Mex cheese, grated
1 red bell pepper, small dice
3 tablespoons chopped cilantro
Salt and pepper, to taste
ΒΌ cup Tex Mex, shredded
