Mexican Chocolate Granola

While brainstorming for other ways that I could mix up my normal granola recipe, I remembered how much I love to drink Mexican Hot Chocolate... it is a perfect balance of chocolate and cinnamon, with a hint of vanilla. YUM! So of course I had to try putting it in granola form. It is chocolat-y, cinnamon-y and chewy! Perfect! 3 cups old fashioned oats
1 1/2 cups corn flakes, slightly crushed
1/2 cup chopped almonds
3 TBS oil
1/2 cup honey
3 TBS cocoa
2 TBS cinnamon
2 tsp vanilla
3 TBS Chia seeds
