Mexican Dorito & Chicken Casserole

A delicious Mexican dish which combines shredded cooked chicken, shredded Mexican cheese blend, cream of chicken soup, milk, sour cream, tomatoes, taco seasoning, Doritos, shredded lettuce, diced tomato!

1 lb. cooked, cubed chicken breast
2 cups shredded Mexican cheese blend (divided in two)
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 can Rotel
1/2 package taco seasoning
1 large bag (32 oz.) Doritos, crushed
1/3 head shredded lettuce
1 large diced tomato
Preheat oven to 350. In a large bowl, mix together cooked, cubed chicken, 1 cup shredded cheese, cream of chicken soup, milk, sour cream, undrained Rotel, & 1/2 packet taco seasoning. Mix well. Grease a 9 x 13 casserole dish. Add a layer of crushed Doritos in the bottom of the pan. Layer about 1/2 of the chicken mixture evenly across the top. Add another layer of the crushed Doritos, then the rest of the chicken mixture. Top with the remaining shredded cheese. Spray foil with non-stick spray. Cover casserole dish, spray side down (to prevent cheese from sticking). Bake for 30 minutes until bubbling and hot. Remove from oven, remove foil and top with shredded lettuce & diced tomato.
