Mezzi Zitti con Fagioli e Salsiccia

There's a wood dish called 'scifa' that we would eat this meal out of. My father loved to make this one and I never remember anyone talking whenever he made it - just silence and smiles, perhaps that's why papa made it - to keep us quiet for once. The mezzi zitti with the sausage makes for a great balance with the cannellini beans, creating a high protein meal.

• 4 cups Mezzi Ziti Pasta
• 4 oz diced onion
• 1 oz chopped garlic
• 4 oz olive oil
• 2 bay leaves
• 3 slices pancetta • 1 tspn crushed red pepper
• 1 cup of drained can of cannellini beans
• 6 links of Italian sausage
• 4oz liquid chicken stock
• 4 oz grated romano
• 2 tblspn chopped parsley
• 2 oz butter
• 4 oz diced tomato
• Pinch of salt for the pasta water
Before starting this recipe, make sure that your sausages are fully cooked • Begin bringing a pot of salted water to a boil - add pasta upon boil • In a skillet, put olive oil, garlic, and both bay leaves on medium heat to soften • Toss the Ziti into your boiling water and cook for about 10 minutes • Take the cooked sausage and slice into small medallions • Dice the pancetta and add to skillet - continue to simmer • Add chicken stock, red pepper, butter, beans, onion, and tomato and bring to a simmer • Stir in sausage medallions • Remove the pasta from the pot with a spoon and place directly in sauce pan and stir • Plate the pasta and garnish with romano cheese and parsley
