Awesome individual sized pies to keep you from eating a full sized pie!

For the Pies
2 1/2 cups all-purpose flour, plus extra for rolling
1 cup (2 sticks or 8 ounces) unsalted butter, very-cold, cut into ½ inch cubes
1 teaspoon salt
1 teaspoon sugar
6 to 8 Tbsp ice water
1 beaten egg
For the filling
4 cups berries (I use frozen)
2/3 cup sugar
1/4 cup minute tapioca
1/2 teaspoon cinnamon
A pinch of salt
Zest of a lemon
4-6 tablespoons lemon juice, depending on what berries you use and their tartness level.
