Mini Croque Monsieur

This classic French toastie makes a deliciously indulgent breakfast... My kids love it and i always make sure to make extra for lunch. They just can't get enough. Simple and easy... This is a Saturday tradition at my house. Enjoy!

4 tablespoons Butter
2 tablespoons plain Flour
350ml (12fl oz) Milk
Salt and freshly ground Black Pepper
1 teaspoon Dijon or English mustard
8 thick slices Bread, crusts removed
4 thick slices Ham
150 g (5 oz) Cheese
2 large Eggs
1 tablespoon Extra-virgin Olive Oil
(1) Melt the butter in a pan, then add the flour and stir to a paste. Gradually stir in 250 ml (9fl oz) milk and bring to a gentle boil. Season. Cook for 2-3 minutes, stirring until the sauce begins to thicken. Mix in the mustard. (2) Spread the sauce over 4 slices of bread. Place a slice of ham on each one and scatter over the grated cheese. Top with the remaining bread slices and press down gently. (3) Beat the eggs and remaining milk in a wide shallow dish. Dip both sides of each sandwich into the mixture. (4) Heat a frying pan with a little olive oil. Cook the sandwiches for 2 minutes until browned on one side. Turn over and cook for a further 2 minutes. Remove from the pan, keep warm and cook the rest. Cut into quarters and enjoy.
