But you know the issue with pot pies? They are a pain in the carcass to make, making the pie crust alone is enough to make me start drinking heavily and just order a pizza. So I came up with my easier version Mini Turkey Pot Pies. I used leftover turkey, leftover gravy and broth, and pre-made pie crusts and frozen veggies. 1 package pre-made pie crusts (2 pie crusts) at room temperature
1 c cubed turkey or chicken
1- 1 1/2 c leftover gravy(depending on your own tastes)
2 Tbsp. turkey or chicken broth
3/4 c frozen pea and carrot mixture
1/2 c frozen corn
