Mint Chip Brownie Cupcakes

A brownie turned into a cupcake and topped with a rich mint chip buttercream that tastes like ice cream!

1/2 cup unsalted butter, melted
1 cup granulated sugar
2/3 cup unsweetened cocoa powder
2 eggs
2 teaspoons vanilla extract
1 tablespoon brewed coffee (or you can substitute water)
1/4 teaspoon salt
1/2 cup all-purpose flour
Frosting:
1/2 cup unsalted butter, softened
Pinch of salt
4 cups powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
2-5 tablespoons heavy whipping cream (as needed for consistency)
2-3 drops of green food coloring
1 cup mini chocolate chips, divided
