I can't get enough of Cafe Rio's mint limeade so I decided to make a copycat recipe.

1/2 cup lime juice, freshly squeezed
1/2 cup simple syrup
1 cup water. cold
3 T fresh mint, finely chopped
Simple Syrup
1/2 cup water
1/2 cup sugar
1/2 cup simple syrup
1 cup water. cold
3 T fresh mint, finely chopped
Simple Syrup
1/2 cup water
1/2 cup sugar
Make the simple syrup by combining water and sugar over low heat. Cook until mixture is clear and the sugar is dissolved. Remove from heat.
In a pitcher combine all the ingredients. Stir.
Serve over ice.
