Moist and Chewy Peanut Butter Cookies

Peanut butter cookies that aren't dry and crumbly! The perfect peanut butter cookies!

3 cups flour
1 cup sugar
1 1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 stick butter
1 cup peanut butter
1 cup honey
2 eggs

chocolate chips, for drizzling

Preheat the oven to 350 degrees F.
In a medium mixing bowl, combine the flour, sugar, baking soda, baking powder and salt; whisk together and set aside. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, peanut butter and honey. Mix in the eggs one at a time, beating well after each addition. With the mixer on low speed, add the dry ingredients to the peanut butter mixture and beat just until incorporated.
Roll the dough int 1 1/2 in. balls, and roll each dough ball in sugar. Place the dough balls on an ungreased baking sheet, a couple inches apart. Press a fork into the balls to create the signature peanut butter cookie pattern. (This is optional, if you don't want to do it.) Bake for 10-12 min. before transferring to a wire cooling rack to cool completely. Repeat with the remaining dough.
Melt chocolate chips in a double boiler, and then drizzle over the top of cookies.
You could also add about 1 1/2 cups of chocolate chips to the cookie dough, for a fun variation!
