10 - 12 pound whole turkey
1 teaspoon dried sage
2 teaspoons Italian seasoning
1½ cup of mayonnaise
1 tbsp coarse salt
1 tablespoon black pepper
3 stalks celery rough chopped
1 medium onion rough chopped
½ cup butter
