1/2 pound ground pork
1 tablespoon canola oil
2 cups beef/bone broth (I used homemade bone broth)
1/2 cup mojo sauce
1 (16-oz) can reduced-sodium pinto beans, drained
1 pound potatoes, peeled and diced
2 cups cooked rice
1 medium avocado, chopped
