mom's apple cake

This has to be one of my most favorite cakes my mom would make. It was/is quite a big job to do. Since I am not great with newer technology, I made this the way my mom made it using a standing grater to grate the apples. The photo I have here is not of the actual cake, but of a similar cake I found on the internet. My mom's recipe is not complete. Many of her recipes are by feel, by taste, or texture. I do not have the correct baking time, so please watch your oven. She did not give me corr

3 c flour
2 1/2 stick butter
2 egg yolks
3/4 c sugar
1 t vanilla
1 t baking powder
1/4 c orange juice or milk. may need more
15-20 granny smith apples peeled cored grated
1/4 c sugar more or less to taste
2 T cream of wheat
1 t cinnamon
1/2 t nutmeg
2 egg whites
Cut butter into flour mix until small peas. Add egg yolks sugar vanilla b powder and orange juice. Separate dough into two. One should be a bit larger than the other. Roll one piece of dough out so it would fit into 9x 13 pan approx. with dough to go up sides. Roll out thin. Lift and place into greased pan. Patch holes if needed. Mix apples with cinnamon, nutmeg and sugar. Taste apples see if sweet enough to your taste. Wring out apples to remove excess moisture. Place cream of wheat on pie crust on bottom. spread evenly over surgace. Place apples on top. Roll out second piece of dough. Place on top of apples. Pierce with fork in several areas to vent. Beat remaining 2 egg whites slightly Bake 350 about 30 minutes. Spread egg whites on top. Return to oven and bake till golden brown about 20 minutes more
