Mom's Awesome Cornbread

This is a delicious made from scratch cornbread with cream corn in it. This is a recipe handed down from my mom and it's a family favorite! Super easy to make and turns out fabulous every time!

1 cup self-rising cornbread
3 tsp. baking powder
1 tsp. salt
2 eggs
1/2 cup oil + 1 Tbsp. (for skillet)
8 oz can of cream corn
1 cup sour cream
1. Put 1 Tbsp. of oil in a cast iron skillet and put in a 400 degree oven and let skillet get hot while you are mixing the cornbread. (About 10 mins) 2. Mix cornmeal, baking powder and salt together in a bowl. 3. In another bowl, mix 2 eggs slightly beaten with oil and can of cream corn. 4. Pour wet ingredients into dry ingredients and stir just until mixed together. Batter may be a little lumpy. 5. Now, add in sour cream and mix until everything is mixed together. 6. Be very careful and take skillet out of oven, set on pot holder, and pour cornbread mixture into skillet and put back in oven. 7. Cook at 400 degrees for 17 to 20 minutes. I use a 12" skillet. It's fine to use a smaller skillet but cooking time will be a little longer. Check for doneness by testing with a toothpick in the center, when it comes out clean it's done. 8. ENJOY!!!!
