Butternut squash can be made into the most delicious soup! Cooking hard winter squash is not that difficult. Just cut a couple of slits in the un-peeled squash and microwave it to make this crazy good soup recipe!

1 medium butternut squash
3 c. chicken broth
3 T. butter or margarine
3 T. flour
2 ½ c. milk
Dash nutmeg
salt and pepper to taste
