Mom's Potato Salad

A creamy, mustard style potato sald with lots of cucumbers for extra crunch.

6 med. to large russet potatoes, peeled and boiled until fork tender andcooled
5 hard boiled eggs, cooled and diced roughly
1/4 small onion, chopped fine
1 1/2 cucmbers, large diced
3/4 cup mayonaise
4 teaspoons mustard
1 teaspoon salt
1/2 teaspoon ground pepper
Quarter potatoes and cut into thick slices. Carefully mix in the onion ,chopped hardboiled eggs, and cucumber so as not to mash up the potatoes too much. Mix together dressing ingredients: mayonaise, mustard, salt and pepper. Fold the dressing into the potato mixture. Chill well before serving
