This Moroccan Stew is filled with chickpeas, carrot and butternut squash then flavored with warming spices, honey and preserved lemons. Perfect for Meatless Monday and so tasty!

1 onion ( skin removed and sliced )
2 garlic cloves ( skin removed and minced )
2 carrots ( diced )
300 grams butternut squash ( diced )
1 preserved lemon ( finely chopped )
1.5 teaspoons ground coriander
1 teaspoon ground cinnamon
0.5 teaspoon ground ginger
0.5 teaspoon ground pepper
pinch saffron threads
500 grams passata
250 milliliters boiled water
1 can chickpeas ( liquid drained )
1 tablespoon honey
pinch salt ( to taste )
2 handfuls fresh spinach
