Mozzarella Moons with Tomato Jam

Fresh mozzarella cheese breaded and pan fried served with a unique tomato jam. A classier version of the mozzarella stick with Marinara.

8 oz fresh mozzarella cut in 1/2 inch thick circles
1/2 cup of milk
1 cup of flour
4 eggs, beaten
2 cups of panko bread crumbs
salt and pepper
chopped parsley (1/2 of a bunch)
olive oil for frying
Slice the fresh mozzarella in 1/2 inch circles. 8 oz of mozzarella should give you 16 pieces. Put the mozzarella on paper towels to dry them. Once the mozzarella is dry, salt and pepper each piece. Put the milk, flour, and beaten eggs in seperate bowls. Mix the panko bread crumbs and chopped parsley in a bowl. Bread each piece of mozzarella. The method for breading is dip the mozzarella in milk, then flour, then beaten egg, then panko mixture. Once mozzarella is breaded place in the freezer for about 10 minutes. In a shallow sautee pan, pour enough olive oil to bring the level up to approximately half an inch. Heat the olive oil to medium or medium high heat, and when ready fry each piece of mozzarella until crsipy. Garnish with chopped parsley. Serve with tomato jam.
