Mushroom and Veal Sauce

Gratifying mushroom and veal sauce: first simmered with tomatoes and onions, garnished with a drip of heavy cream, and then baked in foil using a water bath.

1 yellow onion (large)
3 tablespoons butter
¼ teaspoon oil
1 teaspoon salt
1-2 tomatoes
16 ounces veal
16 ounces portabello mushrooms
½ teaspoon ground pepper
½ teaspoon salt
¼ teaspoon sugar
6 ounces heavy cream
