It's the original French Market donut! This New Orleans style beignet is so good for brunch, snack or whenever. Just load it with powdered sugar and it's just like being in the Crescent City... almost!

1 cup water
4 oz butter, unsalted
¼ teaspoon salt
1 teaspoon sugar
1 cup, plus 2 tablespoons sifted all-purpose flour
4 large eggs
1 teaspoon vanilla extract
vegetable shortening, for deep frying

In a small saucepan combine the water, butter, granulated sugar, and salt; bring the mixture to a rapid boil.
Remove the pan from heat and add the flour all at once, stir vigorously.
