No Bake Chocolate Peanut Butter Bars

Oh chocolate + peanut butter. You will always have a special place in my heart! With the added bonus of not having to bake this dynamic duo in order to get a scrumptious bar-like dessert, my heart has been won over completely. In the summer, we often eat lighter meals & I kind of see it as a challenge to test how long we can go without turning on our oven. And by lighter meals, I just meal cooler ones. For the bars
6 tbsp unsalted butter, softened
6 firmly packed tbsp demerara (raw) sugar
1 1/2 cups creamy peanut butter
1/2 cup graham cracker crumbs
1 tsp vanilla
1/2 tsp salt
2 cups powdered sugar
For the chocolate glaze
8 ounces dark chocolate (either chips or chopped fine)
5 tbsp heavy cream
½ tsp vanilla extract
6 tbsp unsalted butter, softened
6 firmly packed tbsp demerara (raw) sugar
1 1/2 cups creamy peanut butter
1/2 cup graham cracker crumbs
1 tsp vanilla
1/2 tsp salt
2 cups powdered sugar
For the chocolate glaze
8 ounces dark chocolate (either chips or chopped fine)
5 tbsp heavy cream

Line an 8x8 pan with parchment paper, leaving a 2-inch overhang on all sides. Set aside.
