No Monkeying Around! Banana Muffins

No time to be monkeying around with a lot of steps? This quick, one bowl banana bread recipe is a no fuss, no muss way to use up those ripe bananas and is a HUGE hit with the family.

2 Ripe Bananas
1 cup white sugar
1 cup flour
1 stick butter (room temperature)
2 Eggs
1/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. pure vanilla extract
Optional stir ins: 1/2 cup of chopped walnuts or pecans, 1/2 cup mini choc. chips.

Preheat oven to 300 degrees F
Prepare loaf pans or mini pans and/or muffin pan - spray with non-stick spray
In mixing bowl mash bananas and softened butter till combined.
Add remaining ingredients to bowl and mix till combined.
Pour into prepared pan(s) and bake for approximately 1 hour.
Bread is done when toothpick inserted in center comes our clean.
