Oil-Free Baked Falafel

Healthier and easier clean-up. I decorate the dish with carrot and cucumber to make a musical staff, just for fun. The falafels are musical notes!

15 ounce Garbanzo beans
1 small onion
2 garlic cloves
1 egg
2 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon salt
¼ ground black pepper
1 teaspoon lemon juice
1 cup bread crumb
1 tablespoon plain yogurt 2 tablespoon finely chopped cucumber 1 tablespoon Mayonnaise Preheat oven to 350 degrees Fahrenheit. Put the beans in a bowl and mash. Finely chop onion and garlic, add to the beans. In a small bowl, mix cumin, coriander, salt and pepper, and then add the eggs and lemon juice. Put this into the bean dough. Slowly add the bread crumb, until bean dough does not stick but does not break either. Shape into 16 to 20 balls, or your favorite size and number. Slightly oil a baking dish. Place the balls in the dish, leaving some space between them. Put the baking into the oven and bake about 10 to 15 minutes, or until all the balls are heated through. While you are baking the falafels, make the cucumber sauce and refrigerate. To make cucumber sauce: Mix together yogurt, cucumber and mayonnaise. When falafels are ready, serve with cucumber sauce.
