This casserole can be made ahead and baked when you need it! It is great to do when you have overnight guests or for a special occasion brunch. Serve muffins on the side with fresh fruit.

1 (32 oz) bag frozen southern hash brown potatoes
1 cup chopped, cooked ham
1/2 cup sliced olives
2 Tbsp chopped onion
2 Tbsp chopped green pepper
1 cup shredded cheddar cheese
12 eggs
1 cup milk
1/8 tsp pepper
