Paleo Chicken Curry Recipe

This a great recipe for Paleo coconut chicken curry it has zucchini, grape tomatoes, and onion. This Indian inspired dish makes a great meal, either have it like a soup or with a carb that is approved for the diet you are on, such as jasmine rice for gluten free, quinoa for Clean Eating and cauliflower rice for Paleo.

2 tbsp olive or coconut oil
8 chicken thighs boneless, skinless, cut into 1" pieces
1 large onion cut into large chunks
3 small zucchini Cut in half lengthwise and thickly sliced
1 tsp garlic minced
1 tbsp curry powder
1/2 tsp paprika
2 tsp coarse salt
30 ounces coconut milk
1 cup yellow or red grape tomatoes
cilantro to garnish

Heat the olive oil in a stock pot to high heat.
Add the chicken and cook until chicken pieces are browned on both sides.
Remove the chicken from the pan and set aside, keeping the remaining oil in the stock...
