3 cans coconut milk
1 cup fresh mushrooms – sliced
1/4 cup chopped fresh cilantro
1/4 cup fresh lime juice
2 shallots, finely chopped
2 tablespoons minced ginger
2 teaspoons natural red curry paste
2 stalks lemon grass – bruised
2 tablespoons organic coconut sugar
1/4 teaspoon organic crushed red pepper
Organic sea salt to taste
1 lb. cooked & diced hormone free chicken or shrimp – (optional)
1 tablespoon organic extra virgin olive oil
