These tuna cakes are a fantastic way to get some delicious fish into your meals! They are very healthy, and are gluten free and paleo friendly! My toddler even loved them, which means they are definitely good! These tuna cakes are loaded with flavors from lemon, fresh parsley and even vegetables!

1 medium boiled/steamed potato (this can be prepared ahead of time)
6 oz tuna (I used a tin)
1/4 cup leek (finely chopped)
1 shallot
1/2 shredded carrot
1 egg
2 tablespoons freshly squeezed lemon juice
