Deliciously creamy polenta topped with caramelized vegetables. Quick and easy meal for a busy work night!

1/2 tbsp olive oil
1 cup sliced mushrooms
1 cup sliced onion
1/2 cup sliced green bell pepper
salt, pepper, garlic powder to taste
1/3 cup polenta
1 cup vegetable broth (+3 tbsp)
freshly grated parmesan cheese
