(Pepper-Jack) Cheeseburger Soup

Tender potatoes, carrots, celery & onion amidst a cheesy & creamy broth with chunks of ground beef make this soup hearty & delicious with that kick from the pepper-jack cheese.

1 lb ( 85/15 ground beef )
3 Tbsp butter
1/2 red onion ( chopped )
4 small carrots, peeled & diced
3 ribs celery ( diced )
1 tsp dried basil
1 tsp dried parsley flakes
3/4 tsp kosher salt
1/2 tsp pepper
1/4 cup all-purpose flour
3 cups beef broth ( or left over Au Jus )
1 1/2 cups milk
4 medium red potatoes, small diced (I like to leave the skin on, but if you prefer to peel them, that is fine.)
8 oz pepper jack cheese ( shredded )
1/4 cup sour cream
