Deliciously creamy vanilla cheesecake on top of a cinnamon spiced digestive biscuit crumb crust and topped with a sour cream topping!

For the Crust
2 and 1/2 cups (250g) digestive biscuit/graham cracker crumbs
1/4 cup (50 g) caster/granulated sugar
1 teaspoon ground cinnamon
1/3 cup (75 g) unsalted butter ( melted )
For the Cheesecake
4 cups (900 g) cream cheese ( softened )
1 cup (200 g) caster/granulated sugar
2 large eggs ( room temperature )
2 teaspoons vanilla extract
2 cups (500 ml) greek yogurt
For the Sour Cream Topping
1 cup (240 ml) sour cream
1/4 cup (30 g) icing/powdered sugar
1 teaspoon vanilla extract
