Pesto Avocado Sandwiches (Vegan)

These sandwiches are so delicious, you won't even miss the meat! The pesto gives it a very unique flavor.

1 cup basil leaves
1 large garlic clove, minced
1/2 cup sundried tomatoes in olive oil (from jar)
juice from 1 lemon
2 cups arugula
1/8 teaspoon course sea salt
1/8 teaspoon freshly ground pepper
whole grain sandwich bread (I like Trader Joe's Whole Grain)
2 tablespoon favorite hummus
1 cup pea shoots or sprouts
1 medium avocado, sliced
2 small Roma tomatoes, sliced
