Pineapple Bacon Wrapped Chicken

3-4 chicken breasts (boneless and skinless)
1/2 tsp salt (or to taste)
1/4 tsp pepper (or to taste)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
6 - 8 strips of center cut bacon (or enough to wrap each piece of chicken)
1 can (20 oz) pineapple chunks (juice reserved)
1 tsp Dijon mustard
1 tbsp. honey
1 tsp lime juice
1/2 tsp salt (or to taste)
1/4 tsp pepper (or to taste)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
6 - 8 strips of center cut bacon (or enough to wrap each piece of chicken)
1 can (20 oz) pineapple chunks (juice reserved)
1 tsp Dijon mustard
1 tbsp. honey
1 tsp lime juice
1. Preheat oven to 375 degrees.
2. Cut each chicken breast across into 1 inch pieces.
3. Mix together salt, pepper, garlic powder, onion powder, and chili powder, and sprinkle over both sides of chicken pieces.
4. Cut the strips of bacon in half and wrap each piece of chicken.
5. Put the bacon wrapped chicken in a baking dish and bake for about 10 minutes or until bacon has cooked and rendered its fat.
6. Meanwhile, drain a can of pineapple chunks and reserve the juice to make a sauce.
7. Whisk together the reserved pineapple juice, Dijon mustard, honey, and lime juice.
8. Take the chicken out of the oven and drain the bacon fat. Then, add the pineapple chunks and drizzle the sauce over the chicken.
9. Put the chicken back in the oven and bake for 10-15 more minutes. Serve over white rice and enjoy.
