Pork and Eggs Breakfast Sandwich

A fried egg is stacked with a thick slice of pork roast, nestled between 2 toasted pieces of bread that have been slathered in tomato jam and herbed mayo.

2 tablespoons softened butter, olive oil or coconut oil

4 slices whole grain bread (I use Brownberry Oatnut)

2 thick slices cooked pork roast (such as shoulder or loin)

2 large eggs

a pinch each of salt and ground black pepper

1/2 cup tomato jam (see recipe below)

1/4 cup herbed mayo (see recipe below)

Tomato Jam:

1 teaspoon olive oil

1/4 cup chopped onion

1 large tomato, peeled and chopped

1/2 teaspoon mustard seed

1/2 teaspoon dried thyme

1/2 teaspoon cinnamon

1/2 tablespoon molasses

1 tablespoon red wine vinegar

1/8 teaspoon of chili pepper flakes

a big pinch of salt

Herbed Mayo:

2 tablespoons light mayo

2 tablespoons lite sour cream or plain yogurt

1-2 tablespoons chopped fresh herbs (such as rosemary, basil, thyme, savory, oregano, etc)

pinch salt
