I love taco salad – it’s definitely a favorite here at our house. I usually make it with ground beef, but after the last time that I made Green Chili Pork Taco’s I had a lot of meat left over and didn’t feel like tacos again…so I decided to use it in a Taco Salad! Pork Taco Salad turned out REALLY yummy and I’m sure you’ll enjoy it! I also loved making the meat 1 time and have 2 separate meals out of it! 4 pounds of pork is A LOT OF TACO’s! About 1 - 1 1/2 pounds of Pork Taco Meat
Lettuce (I used 1 10 ounce bag of chopped romaine and 1/2 of a 10 ounce bag of iceburg mix)
1 C cheddar cheese shredded
1 red onion diced
2-4 tomatoes chopped
1 1/2 C Thousand Island Dressing
1 Avocado sliced
