Pork Tenderloin and Wild Rice Salad

As flavorful and moist grilled meat can be. The wild rice salad and mint is the perfect complement.

For the marinade:
2 tablespoons honey
2 tablespoons dijon mustard
2 tablespoons sesame oil
2 tablespoons rice vinegar
2 tablespoons finely chopped ginger
1 tablespoon minced garlic
1 tablespoon soy sauce (GF version if you need this GF)
1/2 teaspoon freshly ground pepper

2 pork tenderloins, about 1 pound each

For the rice salad:
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1/4 cup peanut oil
1 cup peeled, seeded and finely chopped cucumber
1/2 cup chopped celery
1/2 cup chopped fresh mint
3 cups cooked wild rice (or combination of white and wild rice)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
