6 medium to large Russet potatoes

2 T. olive oil

1 tsp. salt

1/2 tsp. pepper

1 can black beans, drained and rinsed

1 can corn, drained

1 ½ c. shredded cheese

Fresh salsa

Guacamole

Sour cream
