Pumpkin Butternut Squash Soup

1 medium butternut squash ( about 4 cups cubed )
1 medium pumpkin ( about 3 cups cubed )
1 medium sweet potato ( peeled and dice )
1 medium white onion ( diced )
1 red bell pepper ( diced )
2 whole carrots ( peeled and diced )
3 cloves of garlic ( minced )
2 tablespoons olive oil
1 tablespoons cumin
1 tablespoons onion powder
1 teaspoons chili powder
1 teaspoons nutmeg
4 cups vegetable stock
salt and pepper to taste
  1. Preheat oven to 425F degrees
  2. Place pumpkin, butternut squash and sweet potato onto a baking sheet and drizzle with olive oil, salt and pepper and toss.
