With no added sweeteners other than fruit, these cookies are more like a healthy breakfast or snack. The best part is that they can be customized to suit your tastes -- add some nuts, dried fruit, or even dark chocolate chips!

½ cup pumpkin puree
2 tablespoons almond milk (or water or regular cow's milk)
1 egg
1 teaspoon chia seeds (optional)
½ teaspoon vanilla extract
1 cup oats
1 scoop protein powder
1 teaspoon salt
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon allspice
sliced almonds (optional)
walnuts (optional)
dark chocolate chips (optional)
