Quick and Easy Chilaquiles

This is my Americanized version of chilaquiles. Chilaquiles is a breakfast food, but my favorite Mexican restaurant served it for lunch and dinner, too. I serve mine with chicken, so it’s the lunch and dinner version. However, you could easily swap out the chicken and serve it with some scrambled or fried eggs on top if you want to try it for breakfast. Also, if you want to go more authentic, use queso fresco instead of the Mexican cheese blend.

10 tostada shells

1 T. vegetable oil

3/4 c. onion, chopped

3 cloves garlic, peeled and quartered

3 tomatoes, quartered

6-7 Serrano peppers

1 c. warm water

1 c. chicken, cooked and shredded

Salt
