Quick & Easy Corned Beef Casserole

This is one of my husband's favorite dishes. It's a sentimental dish for us. My husband made this casserole the night we got engaged and then we had a quiet and romantic dinner up in his family's treehouse. Hence...it is now nicknamed "Engagement Casserole."

1, 8 oz bag of egg noodles
1, 12 oz can of corned beef
1, 10 3/4oz can of cream of mushroom soup
1 1/4 C Evaporated Milk
2 C shredded cheddar cheese
Salt & Pepper
2 C crushed potato chips

Begin by cooking the egg noodles until tender. Add the corned beef into a medium bowl. Use a fork to break up the larger chunks. Add the mushroom soup and evaporated milk, salt and pepper to the corned beef and mix. Drain the cooked noodles and pour into a 9x13 casserole dish. Pour the corned beef mixture over the noodles and stir. Sprinkle the shredded cheese over the top. Measure a piece of foil and place over the top of the casserole dish. Bake for 25 minutes at 350 degrees. Remove from the oven and pull off the foil, top with your favorite crushed potato chips. You may also substitute the chips for crushed corn flakes or crackers. Return the dish to the oven uncovered for an additional 3-5 minutes.
