A Healthy Vegan Burger that would make a great Meatless Monday meal.

1 Medium Sweet Potato
1 Cup Black Beans rinsed
1/2 cup cooked Quinoa
1/4 cup chopped onion
1 Garlic clove chopped
1 cup cooked Spinach chopped
Salt and Pepper to taste
1/8 tsp Ancho Chili powder
