Quinoa with Mushrooms

Quinoa is an ancient super grain, that's packed full of protein and nutrients. The nutty flavor of quinoa is terrific when paired with mushrooms. This versatile dish goes with chicken, beef, pork or lamb; or serve it up with a salad as a main dish!

1/3 cup Dried mushrooms
2/3 cup Boiling water
1 cup Quinoa
8 oz. Mushrooms, sliced
2 Tbsp. Olive oil
1 Shallot, minced
2 cloves Garlic, minced
Salt and pepper to taste
1 Tbsp. Butter
1 ½ cups Vegetable or chicken stock; low or no sodium
1 Tbsp. Light soy sauce
1 Tbsp. Fresh Tarragon, chopped
