This Marwari or ‘Rajasthani Lasun ki Chutney’ or ‘Lasan Ki Chatni’ is an essential accompaniment for any Rajasthani thali.

• Cumin seeds – 1 tsp
• Garlic cloves, peeled – 1 large bulb
• Dried red chilies – 5-6 (or as per taste)
• Red chili powder – 2 Tsp (I have used kashmiri red chili powder which is not very hot)
• Salt to taste
• Mustard seeds – 1 tsp
• Water – 1/6 cup (about 6-7 tbsp)
• Oil – 6-7 tbsp
• Garlic cloves, peeled – 1 large bulb
