A tasty spin on the BLT sandwich which includes some nice, pan seared scallops.

8 slices turkey bacon
1 pound large sea scallops
1/2 cup cider vinegar
1/2 brown sugar
4 cups baby spinach
2 cups grape tomatoes, halved
4 large hard boiled eggs, quartered

Place the bacon on a microwave safe plate covered with a paper towel. Top with an additional paper towel and microwave on high 4 to 5 minutes, or until crispy. Remove and crumble.
