This Broccoli & Cheddar Baked Quinoa is very herbaliscious! It’s delicious and is easily prepared for a #MeatlessMonday.

1 3/4 cups water or vegetable broth
1 cup quinoa
2 cups frozen broccoli, thawed and drained
1 1/2 cups minced shallots
1 1/2 cups fat free cheddar cheese, divided
2 cups egg substitute
1/4 cup nonfat yogurt
1 teaspoon garlic salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon smoked paprika
pinch of cayenne pepper
