Mushrooms are the meat of this #MeatlessMonday, breakfast-for-dinner, hearty hash! Top with your egg of choice; we poached ours for an elegant meal.

1 cup onion, diced
2 cups mushrooms, chopped
2 cups leeks, rinsed, drained, and diced
2 cups potatoes, peeled and diced
1 tablespoon extra virgin olive oil
1 teaspoon garlic salt
