A quick and tasty Thai curry chicken dish.

1 pound chicken breast, skinned and boned
1/2 c onion, chopped
1 c lite coconut milk
1 c fat free chicken broth
3 T Thai curry paste
4 oz water chestnuts, drained
14 oz baby corn, drained
4 c brown rice, cooked
