#SundaySupper Waffled Twice Baked Potato Pancake Bites sound confusing but taste amazing. Deliciously creamy Idaho potatoes are whipped and combined with twice baked filling before turning them into pancake batter that is cooked in a waffle iron.

For the mashed potatoes:
4 – 5 large Idaho potatoes
2 tablespoons butter
1/4 to 1/3 cup milk
For waffle batter:
3/4 cup fat free half and half (or regular cream)
1/2 cup egg substitute (or two large eggs)
1 cup shredded cheddar cheese
1/2 cup crumbled bacon
1/3 cup thinly sliced chives
3/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon white pepper
For Sauce:
1/3 cup sour cream
1/4 cup mayonnaise
2 tablespoons crumbled bacon
1 tablespoon thinly sliced green onions
1 tablespoon prepared horseradish
