1 cup rice
2cups water
1 chicken stock cube
1/2 cup orange or red pepper chopped
1cup frozen corn
1 small red onion chopped
1 1/4 cup salsa
1 pound lean ground beef
2 green onions
bunch cilantro
1tsp cumin
1tsp chilli powder
1/2 sharp cheddar grated.
2cups water
1 chicken stock cube
1/2 cup orange or red pepper chopped
1cup frozen corn

1 1/4 cup salsa
1 pound lean ground beef
2 green onions
bunch cilantro
1tsp cumin
1tsp chilli powder
1/2 sharp cheddar grated.
Cook rice according to package,with chicken bouillon cube.
In a large skillet brown beef with peppers,onions,corn and seasonings.When done add rice ,salsa. and cheese.Mix well. top with chopped green onions and cilantro
