Start your day with one of these powerhouse muffins. Will give you the energy and nutrients you need especially on those busy mornings! Makes alot so freeze some to get out later for a nutritious breakfast as you go out the door. Enjoy with a rise and shine shake.

1 cup flour, I used Gluten Free
1 cup shredded coconut
1 cup shredded zucchini
2 cups shredded carrots or butternut squash
1 large apple cored
3/4 cup honey or sugar
3/4 cup raisins
1 tbsp. cinnamon
1 tbsp. baking soda
1 tsp. vanilla
3 large eggs
1/2 cup applesauce
1/2 cup oil
1 cup shredded coconut
1 cup shredded zucchini
2 cups shredded carrots or butternut squash
1 large apple cored
3/4 cup honey or sugar
3/4 cup raisins
1 tbsp. cinnamon
1 tbsp. baking soda
1 tsp. vanilla
3 large eggs
1/2 cup applesauce
1/2 cup oil
Preheat oven to 375 degrees. Grease muffin tins. Mix all ingredients in food processor except raisins and blend. Then add raisins and stir. Pour into muffin tins, makes 24 muffins. Bake for about 22 minutes or until outside golden brown.
